JOB DESCRIPTION:
Sodexo is seeking an Executive Chef for Graceland University located in Lamoni, IA. Graceland is a beautiful, historic campus that was founded in 1895 and sits amid the rolling countryside of Southern Iowa.
In this long-standing partnership, Sodexo Dining offers Resident Dining - with over 600 students on the Resident Dining meal plan, a completely renovated high volume Food Retail operation, and high-end Catering. Menu choices include Healthy Options, International Flavors, Main Fare, Gluten-free, Vegan, Vegetarian and local Organic.
This Executive Chef will manage 30+ employees and be responsible for culinary operations for the main dining hall, multiple food retail locations, food production and service and Catering.
RESPONSIBILITIES:
Be responsible for purchasing, menu compliance, inventory, food cost analysis and food production forecasting; ensure Sodexo Culinary standards including recipe compliance and food quality are implemented have the ability and willingness to develop and motivate team members to embrace culinary innovations ensure food safety, sanitation and workplace safety standard compliance have working knowledge of automated food inventory, ordering, production and management systems.
Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution.

Financial management to include food cost & labor management.

A strong culinary background, with the demonstrated ability to stay current with new culinary trends
Excellent leadership and communication skills with the ability to maintain the highest of culinary standards
Strong mentoring and training skills.
